The Gantry re-opens with Head Chef, Rhys Connell

The Gantry, a uniquely Australian dining experience nestled within a heritage harbourside setting at Pier One, is delighted to announce Rhys Connell as the new Head Chef of The Gantry Restaurant. The Gantry will reopen with Rhys Connell as Head Chef on 3 March for a limited time preview season until June 2022.

The Gantry, a uniquely Australian dining experience nestled within a heritage harbourside setting at Pier One, is delighted to announce Rhys Connell as the new Head Chef of The Gantry Restaurant. The Gantry will reopen with Rhys Connell as Head Chef on 3 March for a limited time preview season until June 2022. 

The Gantry continues its story of celebrating a new generation of talented young chefs creating beautifully effortless food in a uniquely Australian setting. Rhys's career inspiration has been heavily influenced by revered hospitality duo Martin Benn and Vicki Wild for over a decade, first at Sepia where he was Sous Chef for 10 years, followed by a Head Chef role in Melbourne where he opened the hotly anticipated Society Restaurant. 

"With over a decade of working in Australia's brightest and most driven restaurants, I'm pleased and incredibly excited to be joining Pier One Sydney Harbour as Head Chef of The Gantry" commented Rhys Connell.

"I aim to bring a fresh and forward-thinking vision to the dining spaces in this remarkably unique hotel, one that will continue to build on the restaurant and hotel's already impressive success" Rhys continued. 

The new menu will take inspiration from the architectural beauty of the heritage listed Pier as well as Rhys' interpretation of the unique essence of Sydney that envelops The Gantry, lending to a menu of dishes that are effortlessly beautiful but also visually architectural. 

Continuing to showcase Pier One's unique connection to the harbour, the new menu is designed to be eaten by the sea. Using gentle cookery methods, the dishes will only be seasoned in a way that elevates the produce in a playful way. 

"Rather than leaning into big, bold flavours I've designed the menu to instead intentionally focus on more refined and elegant flavouring that will highlight each season, with fresh and bright flavours in summer and spring to more warmer and familiar flavours in Autumn and Winter" Rhys commented. 

The Gantry will continue to champion NSW's stunning seasonal produce, with personal relationships with suppliers and hand-picked ingredients a key philosophy behind Rhys' food, only selecting produce that is within driving distance of the restaurant. 
 
"The land produces and bears the brunt of work for the kitchen brigade, giving us the chance to celebrate the ingredients and let the food speak for itself. I focus on only refining the produce with gentle techniques to enhance the natural flavours that are already there". Rhys concluded. 

Following the limited time preview season with Rhys Connell, The Gantry will undergo heritage restorations and a design refresh, relaunching with a new aesthetic in October 2022.
